The waterfall problem? you have to get to the top some how and put blocks on the water to soak it up.

Piper, why not place vines on the big tree, all the way to the top and then climb them like ladders, since vines act like ladders. Then, once you’re on top, place something like dirt blocks to replace the water source blocks (which is the top layer, usually). :-)

To stop the water you just need to take out the source blocks at top
