You should totally build a wall on that side of the town using the same block scheme as the houses, just with twice as much cobble. There could be small towers with fence posts at the top holding multi-color cloth roofs like a medieval Middle East building.

if you cant get redstone then you cant get brewing stands which require blaze rods

True, It is only 16×16 though, also about your piston table idea instead of using redstone couldn’t you hide a lever underneath the floor?
