Sugar cane is nowhere to be found but you did miss some diamonds at 18:32
near the water to the left. Go get them diamonds :D

If you install optifine you can might get rid of some FPS issues and you
could turn of the void fog, wich is what makes it suddenly glitch dark… I
think

You cannot place solid blocks on the top level but solid blocks can
generate there by the game. Torches are not solid blocks so you can place
those.

I’ve been playing on a Caves of Chaos map for several weeks now and the two
thing that have eluded me so far are Pumpkins and Sugar cane. I haven’t
seen either anywhere. I did manage to find a village and got books from
one of their houses so I could make an enchanting table…

You should consider getting leaves/booshes to use as scaffolding. Hooray
for scaffolding material that mobs don’t spawn on! Yeah, half-slabs work,
but booshes are better
