Why does a gold farm has giant portals? If you make many small portals you
get more I think

Try putting water on top of the trap doors so that the items on obsidian
don’t despawn because they will be diverted through a route? Also you could
funnel the pigmen through it to minimise the ones going through the
portals?

Xisuma you can simply need to put another portal in the nether that is
perfectly synced with a portal in the overworld where you would like the
items to be dropped and use hoppers/dropper to connect from the collection
point in the nether.

Great vid as always.
On the sorter: I think some items are jumping out diagonally and skipping
the hopper. Maybe you can take the stream out straight for a block giving
the items no choice but to pass over the hopper.
