Xisuma, help for when you face the guardians again. The Guardians (the mob,
not the boss thingy) will ALWAYS hurt you if you damage it while it’s
spikes are out. when its spiked are out it basically means it has the
“thorns enchantment” active. meaning it will hurt you no matter what with
melee (not sure with long range), usually when they swim their spikes are
retracted, and that’s the best time to hit them as the thorns are
deactivated. Just so you don’t fight them recklessly in the future.

the wither skeleton throws down harming potions frequently, which actually
heal him since he’s an undead mob. so basically you’d have to find a way to
kill him faster than his potions heal him, without getting killed
yourselves. it’s quite a tough job

If you place a chest on the wall next to the chest on the other side of the
