That would be easier if you only had one destination chest, however if you wanted to sort the items from the farm then you would need this design since the conventional sorter breaks when it gets overflowed.
Also in theory at least this design keeps the entity count slightly lower than your suggestion creating slightly less lag.

easier way , water stream over a hopper , that hopper is connected to a chest, when both hopper and chest are full items will continue to flow in the water stream, at the end of the stream place lava. this requires no redstone
