It’s probably because you have 2 slime chunks near each other, I think that would double the chances of getting slimes.

I created 2 slime farms based on your design, one of one chunk and one with 3 chunks. The one chunk almost never had a slime while the 3 chunk one had tons. And they were both far enough from each other not to interfere. Maybe the amount of linked slime-chunks exponentially increases the chances of slimes to spawn?

Monkey your mob spanner is underground and near to the slime chunk maybe that is interfering with the spawn rate
