Tower defense/expansion would be awesome. Expand your villages (each village represented by a villager?) while strategically defending them from waves of zombies using iron golems, bows, fire charges, etc. Strengthen your villages/troops and weaken the enemy with splash potions! Perhaps the player could actively participate in the defense?
Sounds a bit complicated redstone-wise, but it may be doable if you practice beforehand!

The most useful design in SURVIVAL. A lot of people are building cool redstone contraptions that really are not useful, practical or easily obtainable. The winner would have to build the most practical and useful contraption in single player vanilla minecraft.

Fastest transportation system without using pistons, minecarts or boats. Possibly use the same seed or saved map and have a course through the nether and the end.
