Could you not bring the source blocks of water that keep the animals in the pens up the walls one block higher? To have it always flow over the blocks that get pushed up. Or alternatively, just put half slabs around the edge of the pen to keep them from jumping / glitching out of it.

just curious why you dont open up a hole in the island where the cows are instead of in the water, you lure them anyway with the wheat. Then you dont have to worry about the animals getting out of the enclosed area i think.
